Why a blank line is a different skill
Kids who only tap answers often stall when the quiz has no options. Spotting 56 in a row of numbers is easy. Pulling 7 × 8 out of memory is the worksheet.
Typing also tells you the truth. A guess among four tiles is right a quarter of the time. With a typed answer you can see whether they know it.
Let the fact be correct before you care about speed
Correctness should settle first. Speed arrives once the fact is actually automatic. A countdown on each question tends to panic kids who were about to get it. Noticing how fast the answer came, without putting a clock on the question, is enough information for the schedule.
